    Meat! (Steak - how do you like it?)

    A conversation with a friend spurred this poll. Please answer how you like your steak, and also if you would consider yourself a "foodie" or not. Me, I'm a foodie. I'm a total gourmet nut, will spend $20 on a small bottle of chardonnay-barrel-smoked fleur de sel without blinking, and like my steak just slightly past rare (like 122-123 degrees).

    Please answer honestly. If you're a vegetarian, well, there's places for people like you. Places other than here.


    Edit - oh, and if you wouldn't mind specifying if you're a "foodie" in your text, that'd help a lot. Thanks!

    I subscribe to the Alton Brown method of cooking steak.

    Place 10 to 12-inch cast iron skillet in oven and heat oven to 500 degrees. Bring steak(s) to room temperature.

    When oven reaches temperature, remove pan and place on range over high heat. Coat steak lightly with oil and season both sides with a generous pinch of salt. Grind on black pepper to taste.

    Immediately place steak in the middle of hot, dry pan. Cook 30 seconds without moving. Turn with tongs and cook another 30 seconds, then put the pan straight into the oven for 2 minutes. Flip steak and cook for another 2 minutes. (This time is for medium rare steaks. If you prefer medium, add a minute to both of the oven turns.)

    Remove steak from pan, cover loosely with foil, and rest for 2 minutes. Serve whole or slice thin and fan onto plate.

    I do this on the grill (making sure the top rack in the grill is big enough for the skillet). Produces a juicy, flavorful steak every time.

    Ooh, now that's a whole other religion question - grill vs. pan. You can REALLY get into it with people on that one. Kind of like cut - I'm a ribeye lover myself, and I love the crust that you can get in a pan (though I love a wood-cooked steak, too). And, a nice red wine/tarragon pan sauce mounted with butter? Fucking awesome pairing.
