I'm sure that's possible. I don't always bother to update much of what is on mine though.

When my laptop opens from being in hibernation, all these programs perform updates: windows, mcAfee and probably more i'm not aware of.
What irks me about this is the down time. When i'm not using the computer, why cant the software do their damn updates?
the alternative is to leave my laptop running. in that case, ide want something to power it down when its done.
so, to the powers-that-be: i want for christmas a computer that runs updates when i'm not using it. THen, shuts down when updates are complete.
Is any of this even possible?
I'm sure that's possible. I don't always bother to update much of what is on mine though.
The only way I know of is to take each program individually off of update.
Then half of them will update anyway until you google how to REALLY get it to stop updating which usually involves some sort of registry editing.
McAfee that is "free" from ISP providers such as AT&T are awesome in this way...they have multiple "mini-updates" everyday.
Why the individual products don't do that is beyond me.

Norton is irritating with auto-updates, background virus scans without your approval and in a year, it expires. It will then but the crap out your to renew.
It seems even after you uninstall Norton there still will be some programing code somewhere that will give popup reminders to buy an updated version, etc. At least that's how it was on my last PC.

The windows updates can be scheduled to occur during a time when your not using your computer. I don't use MacAfee but there should be a place to schedule updates the same way. I would suggest you shift to something like AVG which is provided free to home users.
When it comes to things like Adobe and Java your at the mercy of the software.

Ew! Who in their right mind uses McAfee or Norton! Do what David said! Use AVG as it's free, stable and doesn't intrude on your computer's performance when it does its scans!
